Creative Enzymes Has Cellulase for Food Processing and Fermentation

Cellulose is an important component of plant cell walls. It is straight chain polymer composed of glucose molecules with β-1,4- beta glycosidic bond at the weight of 1/2 ~ 1/3 of total plant. It is the largest renewable substance in nature, and its degradation is the central link of the carbon cycle in nature.

Methods for producing cellulases include solid fermentation and liquid fermentation. Production raw materials are wheat bran, straw powder, waste paper, corn flour and salt. In the presence of cellulase, cellulose can easily be decomposed into small molecules for further fermentation of acetic acid, alcohol and lactic acid.

Characteristics of Cellulase

Cellulase is a generic term which can degrade cellulose into multicomponent enzymes of glucose.

1. Composition of cellulase

Cellulase is generally classified into three groups:

Endoglucanase

Exoglucanase

Β-glucosidase

2. Properties of cellulase

There are wide sources of cellulase. The enzymatic properties of cellulase produced by different sources and different fermentation methods are different. The reaction temperature for cellulase is 30 to 45 ℃, and the optimal reaction temperature is 35 to 37 ℃. In addition, cellulase has high thermal stability. Generally, the optimal temperature is 40 to 65 ℃, and stable temperature range is 50 to 70 ℃. However, the thermal stability of each enzyme is also different, and it is affected by PH.

3. Effect mode of Cellulase

Many researchers have put forward many different views on the process of cellulase converting cellulose into glucose. At present, the generally accepted theory is: firstly, endoglucanase acts on the non-crystalline region of micro-fiber, making it expose many ends for exonuclease action. Cellobiohydrolase is decomposed from non-reductive ends in order to produce cellobiose; then, part of the degradated cellulose further decompose cellobiose or cellotriose by endoglucanase and exonuclease; finally Β-glucosidase breaks it down glucose.
